
Now I don’t know about you, but being in lockdown is tough. And this new normal has seen me eat my body weight in snacks and treat myself to an evening cocktail. Because you know, I deserve it. Now my choice of drink at the moment is Gin. I’ll admit I’m a little late to the gin party, having only really got into Gin late last year. But don’t panic. I’m definitely making up for any lost time by trying all the cocktails I can in lockdown. So here are the three easy gin cocktail recipes that are getting me through the lockdown.
ELDERFLOWER COLLINS
Now let me start by saying that I’m a huge fan of elderflower. So if you love elderflower as much as me then this cocktail is for you. You will need:
- 50ml gin
- 20ml lemon
- 20ml elderflower cordial
- Elderflower (or any other flavour) Tonic
If you have a cocktail shaker, shake the gin with the lemon, and elderflower cordial. If you don’t just mix it together and pour over ice into your glass and then add in your soda. You can decorate it with whatever you like, I love to decorate with blueberries. You can find out more about Mermaid Gin here.
SPARKLING APPLE GIN COCKTAIL
Now this is not only incredible easy to make, but also incredibly tasty to drink. You just need:
- 30ml Gin
- 50ml apple juice
- Squeeze of lemon juice
- Champagne to top up
- Apple to garnish
Just throw in the Gin, apple juice and lemon juice into a cold glass. Stir. Then top up with champagne and garnish with a slice of apple. So simple, but so tasty.
POMEGRANATE GIN FIZZ
And for the final one in easy gin cocktails getting me through lockdown, is this super simple pomegranate gin fizz. All you need is:
- 25ml Gin
- 50ml pomegranate juice
- Champagne to top up
- Pomegranate seeds to garnish
Mix your gin and pomegranate juice in you chilled coupe glass. Top up with champagne, garnish with a few pomegranate seeds and serve immediately. And then repeat, because I guarantee you won’t be able to just drink one of these.

The elderflower collins is a cocktail we enjoy at home. Not tried the mermaid gin before but I love the bottle!

I’ve been drinking a lot of wine but I may have to try some cocktails now the weather is warming up.

light summery gin cocktails like these are my favourites. That pomegranic gin fizz sounds epic – just need to track some juice down.
