Cupcakes are definitely one of my weaknesses, especially Red Velvet cupcakes. For those not familiar with a red velvet cupcake, the best way to describe it is like a little piece of cake heaven. The sponge is red, yet the taste is a mixture of chocolate and vanilla. It is just amazing. Which is why I’m pleased to share with you all a very easy to follow red velvet cupcake recipe.
This is a variation of the Nigella Lawson recipe, but I’ve changed a few things to make it easier to and just as tasty.
So for the sponge you’ll need:
- 250g plain four
- 2 tablespoons cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 100g soft unsalted butter
- 200g caster sugar
- 1 tablespoon of red paste food colouring
- 2 teaspoons of vanilla extract
- 2 eggs
- 175ml buttermilk
For the icing, you’ll need:
- 500g icing sugar
- 125g cream cheese
- 125g soft unsalted butter
- Red glitter to decorate
So to make the cupcakes
- Preheat the oven to 170°C and line 2 muffing tins with paper cases
- Combine the flour, cocoa, baking powder and bicarbonate of soda in a bowl
- Then in a bigger bowl, cream the butter and sugar, beating well. When you have a soft, pale mixture beat in the food colouring and the vanilla
- Keep beating the now oddly colour mixture and add in 1 spoonful of the dried ingredients, then 1 egg, followed by more dried ingredients , then the other egg, followed by the rest of the dried ingredients
- Then beat in the buttermilk and divide the batter between your muffin cases, filing them halfway
- Bake in the oven for about 20 minutes and then leave them to cool on a wire rack
- Once they are completely cooled, you can start on the icing. To begin, sift the icing sugar
- Then add in the cream cheese and butter and whisk until you get a creamy buttery icing
- Then ice each cupcake, either using a spoon or a piping bag
- Then decorate how you like, either with chocolate sprinkles or edible glitter like I have

Oh wow, these look so cute, especially the frosting, I can never get that bit right! I love making brownies, you can add some really fun flavours to them. I have cranberry and hazelnut ones at christmas and they went down a treat! xx
