Now I don’t know about you, but the weather recently has had me craving all the comfort food. And one of my favourite comfort foods to indulge in is chilli-loaded wedges. There’s just something a little naughty, but oh so delicious about home-made wedges covered in chilli with a sprinkling of cheese on top. And the best part of all is that this is a super easy chilli-loaded wedges recipe.
Especially when you use a recipe mix, like the Schwartz chilli con carne mix. Which just makes the whole recipe so much easier to recreate at home. All the spices are already measured out. You just need to add the lamb or beef. Some water, kidney beans and chopped tomatoes. So if you want to recreate the chilli loaded wedges yourself – here’s what you need to do:
Ingredients
- 2 baking potatoes, cut into wedges
- Low-calorie cooking spray or oil
- 250g beef or lamb mince
- 1 onion, sliced
- 3 peppers deseeded and finely chopped
- Schwartz Chilli Con Carne recipe mix
- 230g can chopped tomatoes
Method
- Preheat your oven to 200°C/fan 180°C/gas 6. Put the wedges on a non-stick baking tray, spray with low-calorie cooking spray or drizzle in oil and season lightly. Bake for 25 minutes, then turn, spray again and bake for a further 25 minutes until golden.
- Meanwhile, spray a non-stick frying pan with low-calorie cooking spray or oil and place over a medium-high heat. Add the mince and stir-fry for 10 minutes, then add the onion and cook for 5-6 minutes, or until softened. Then add the pepper and cook for 2-3 minutes, then stir in the Schwartz Chilli Con Carne recipe mix.
- Add the canned tomatoes and cook for 10-15 minutes, or until most of the liquid has evaporated. Remove from the heat.
- Place your wedges onto a dish, add the chilli mix and a sprinkling of cheese and you’re good to go.
Not only are the chilli-loaded wedges one of my favourite comfort food dishes around. But it also makes for a great party dish, as everyone just can just dive in and enjoy the chilli loaded wedges.
So that’s my super easy chilli-loaded wedges recipe. What’s your favourite way to enjoy chilli?
