Upping my gourmet game

Now I don’t know about you. But I’m definitely more of a baker than a cook. I’m not sure why, but I feel more comfortable baking a batch of cupcakes or cookies. Than cooking a casserole or a curry. I think it has something to do with the oven, and trying to get the timings correct. Whatever it is. It’s fair to say that I rely on the microwave rather than the oven to cook the majority of my meals. But microwave doesn’t have to mean boring. In fact it can now mean Michelin inspired.

I know what your thinking. But trust me on this. I made this baked scallop starter in the microwave. I know. The microwave! And it was a lot easier than I thought it would be. Plus it was a lot tastier than I thought it would be too. All you need is a combination microwave. A good recipe. A little creativity. And the possibilities are endless.

Now I wouldn’t normally bake scallops like this. Or at all really. it’s definitely one of those types of food that I’d order in a restaurant rather than make myself. Mainly because I would have no idea how to cook them. But this baked scallop recipe is so simple. I would make a great starter for a dinner party. Or you could add potatoes and more veg for a hearty dinner. I’m honestly so inspired and motivated by how easy this was that already I’m planning on what to make next week in the microwave.

    Oh wow go you! My cooking is awful, I’m sure I could burn water – I do try but I just fail a lot and my other half isn’t much better, perhaps one day we will get our heads around it and be trying some gourmet ideas!

    This sounds like such a simple recipe! I never had the courage to cook scallops because I always thought it was so difficult. Blame it on Gordon Ramsey and his Hell’s Kitchen, haha. I might try this recipe one day.

    This is a fabulous recipe, scallops are one of my husband’s favourites too so it’s going on my “must make” list! I have to admit, our microwave gets used for little more than heating baked beans and milk at the moment!

    I do cook and bake and love it. I wish I had more time to write and even video my recipes. I do also use a microwave to help me depending on what I am doing.

    What a fantastic recipe. I used to be an ok cook but over the last ten years I have really dipped, not helped by the fact my hubby is ultra fussy lol
